I have the postcode polygons, and point shapefile data but when I go into quantities of the layer and choose the colour ramp etc, it doesn't go into a choropleth map like yours. Instead the points just change colour and the postcode boundaries remain colourless.

Very glad you found it helpful Evan!  Some texts are certainly better than others - the ones I like best are ones that provide extra detail and explanations where necessary.  They generally complement videos like these (or vice versa) nicely.
